Fennel ( Foeniculum vulgare ) is a flowering plant species with yellowish green / brown seed in the celery family Apiaceae.
It is indigenous to the Mediterranean and cultivated in the Central Mediterranean region of Turkey. Harvesting time is in August.
Fennel seed has a warm mild aromatic taste similar to anise but more sweeter.
It is sifted and traded with impurities of 0,5 %1 % and 3 % . It can be ground as powder.
Its oil is used in soap industry and cosmetics.
Fennel is unique ingredient of Greek ouzo drink and liqueur. It is popular for meat dishes, fish , sea food and candies. Fennel tea is also used as a carminative. In many parts of India and Pakistan, roasted fennel seeds are consumed as mukhwas, and after-meal digestive and breath freshener.
